Fava Santorinis PDO married with capers and red onions

How to prepare

Ingredients

  • 500 g fava from Santorini
  • 2 medium red onions, coarsely chopped
  • 4 tbsp extra virgin olive oil from Greece
  • 1 sprig of fresh thyme
  • 1.5 l water
  • salt
  • lemon juice
  • extra-virgin olive oil to serve

‘Married fava’

  • 2 red onions
  • 4 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 2 tbsp capers

Optional

  • marinated anchovies
  • pickled onions
  • confit cherry tomatoes
  • caper leaves and caper flower buds
  • chive-infused oil

Instructions

1. Soak 500g Fava Santorinis PDO in water for 30 minutes.

2. Warm 4 tablespoons of olive oil in a heated pan, then add 2 diced red onions and a sprig of fresh thyme.

3. Pour in the drained Fava Santorinis PDO into the pan.

4. Add 1.5 l of water and bring to the boil. Let the mixture simmer for 50 minutes.

5. To accompany the Fava Santorinis PDO, slice 2 red onions and place in a heated pan. Add 1 tbsp. of red wine vinegar and cook until caramelised. Then add 2 tbsp. of capers.

6. Stir the Fava Santorinis PDO until creamy. Add olive oil, salt and lemon juice, before stirring in the caramelised onions and capers.

7. Place on a dish and garnish with pickles, anchovies, and olive oil. Enjoy, it's Fava Santorinis PDO!
