Kalix Löjrom PDO on creamy mashed potatoes

The king of Swedish caviar with protected designation of origin takes pride of place in this recipe.

How to prepare

Ingredients

  • 200 g Kalix Löjrom PDO
  • 200 ml sour cream
  • 2 medium-sized red onions
  • 1 sprig of dill
  • 500 g boiled potatoes
  • 100 g butter
  • 300 ml whipped cream (40%)
  • salt
  • nutmeg

Instructions

1. Strain the sour cream for 30 minutes until firm.

2. Mash the potatoes with butter. Add the whipped cream, a pinch of salt and the nutmeg. Stir well.

3. For the garniture, chop the red onions and the dill.

4. Add Kalix Löjrom PDO on the mashed potatoes. Add some sour cream, the chopped red onions and the dill.

The fish is sourced from a specific part of the Gulf of Bothnia, delimited at sea by the Torneå river estuary to the north and the Åby river estuary to the south, and extending no more than 40 km from the coast.
